Half of farm travel is turning up in the right month.
A farm shows you whatever it is doing that week. Olives are pressed in late autumn, fruit comes off the trees in summer, salt is raked in the dry months, and sleighs need snow on the ground. If the date is fixed and the crop is not, book the farms that work all year: dairies, markets and the organic kitchen gardens.

Seawater is let into shallow clay pans, the sun takes the rest, and what is left is raked into ridges by hand. Kampot does it beside the pepper farms in the dry months; Kona does it on black lava at the edge of the Pacific; Marsala does it under windmills. It is the only crop on this site that is finished by weather alone.

The pearl harvest
A technician opens a live oyster, sets a nucleus inside it and closes it again, and two years later somebody cuts the pearl out. Cygnet Bay on the Dampier Peninsula runs live harvests in front of visitors, and the Broken Bay racks north of Sydney work the same shells for oysters instead.
